  2. Banana-Nut (opt) Bread

  5. Quantity: one loaf  (well?!)

  7. Ingredients:
  8.  1/3 cup shortening            1/2 cup sugar
  9.  2 eggs                        1 3/4 cup all-purpose flour
  10.  1 tsp. baking powder          1/2 tsp. soda
  11.  1/2 tsp. salt                 1 cup mashed ripe bananas
  12.  1/2 cup chopped nuts         
  13. (optional)

  16. Instructions:
  17. Preheat oven to 350 degrees F.
  18. Cream shortening and sugar; add eggs and beat.
  19. Sift dry ingredients; add alternatively with banana.  Blend
  20. well.
  21. Stir in nuts.
  22. Pour into well-greased 9 1/2 x 5 x 3 inch loaf pan.
  23. Bake 40-45 minutes.
  24. Cool on rack.
